It might not feel like Spring yet here in Portland, but the Easter bunny paid us a visit this weekend. Well, rather our good friend Terresa did, and she asked if we wouldn’t mind whipping up a few dozen Easter Macarons for her Sunday dinner. Challenge accepted.
Each holiday or season, we try our best to modify our macaron recipe to take advantage of new ingredients and fresh fruit. This time around, we settled on four main flavors: lemon, pistachio, chocolate and marshmallow. Clarissa really wanted to do a Peeps-flavored mac, but she was sadly overruled (next time, kids).
